กระชาย - “Krachai”, the Thai ginseng - “Krachai”, o ginseng tailandês



กระชาย

เป็นพืชล้มลุก มีเหง้าหรือลำต้นอยู่ใต้ดิน ซึ่งมีลักษณะเรียว ยาว ออกเกาะกลุ่มกันเป็นกระจุก มีสีน้ำตาลหรือสีน้ำตาลแกมส้ม เนื้อข้างในเป็นสีเหลืองมีกลิ่นหอม ส่วนที่ใช้เป็นอาหารคือเหง้าใต้ดินและราก มีรสเผ็ดร้อนขม
สารสำคัญในรากและเหง้ากระชายมีฤทธิ์ยับยั้งการเจริญเติบโตของเชื้อแบคทีเรียในลำไส้ ช่วยขับลม แก้ท้องอืด ท้องเฟ้อ แก้ลมจุกเสียด ช่วยเจริญอาหาร ในรากเหง้าของกระชายมี แคลเซียม เหล็กมาก และยังมีเกลือแร่ต่างๆและวิตามิน เอ วิตามิน ซี อีกด้วย


เหง้ากระชายใช้เป็นส่วนผสมในเครื่องแกงบางอย่าง ส่วนใหญ่เป็นแกงที่ใช้ปลา เช่นน้ำยาปลา แกงส้ม เนื่องจากกลิ่นรสที่เผ็ดร้อนและขมของกระชายจะช่วยดับกลิ่นคาวปลาได้ดี จึงนิยมใส่ในอาหารที่มีปลาเป็นส่วนประกอบหลัก เช่นผัดเผ็ดปลาดุก แกงเขียวหวานลูกชิ้นปลากราย หรือแม้กระทั่งนำมาประกอบอาหารประเภทอื่นๆ เช่น แกงเลียง แรือ ผัดเผ็ด เป็นต้น


“Krachai”, the Thai ginseng


“Krachai”, fingerroot or Thai ginseng it comes from rhizome of the plants. It's long, have a tapering shape and usually we can find it in bunches. “Krachai” has a brown or orange brown color but inside it’s yellow and have a pleasant smell. The part we use for cooking Thai food is the rhizome and the roots which give a hot, spicy and a bitter taste.


“Krachai”, fingerroot or Thai ginseng has properties that are believed to prevent the proliferation of bacteria in the intestines, helps to reduce gas in the intestines, flatulence and helps the digestion. It also has a lot of Calcium, Vitamin C and A.


The rhizome of “Krachai” is used in some recipes, most of them from fish because its hot, spicy and have a bitter taste that helps to cut the fishy smell that some people don’t like.
We can find “Krachai” in dishes with fish has main ingredient like Nam Ya Pla (fish curry), Kaeng Som (sweet and sour soup), Phad Phed Pla Dook (spicy stir fried cat fish) or green curry with fish patties.
However, it's also used in some dishes without fish like Khaeng Liang (spicy light soup) or Phad Phed (spicy stir fried meat or fish).

O “Krachai”, fingerroot ou ginseng tailandês (parecido com a galanga) é extraído do rizoma da planta. É longo, tem uma forma pontiaguda e, regra geral, apresenta-se em cachos. “Krachai” tem uma cor acastanhada ou castanho alaranjado mas, no entanto, por dentro é amarelo e tem um cheiro agradável. A parte que se usa para a cozinha tailandesa é o rizoma e as raízes que emprestam um sabor picante, quente e um pouco amargo à comida.


O “Krachai”, fingerroot ou ginseng tailandês tem propriedades medicinais que se acredita serem benéficas para evitar a proliferação de bactérias nos intestinos, ajuda a reduzir os gases intestinais, a flatulência e ajuda à digestão. Tem também altos teores de Cálcio, Vitamina C e A.


O rizoma do “Krachai”é usado em algumas receitas, na sua maioria de peixe porque é picante e tem um sabor algo amargo, o que ajuda a cortar o cheiro a peixe que muitas pessoas não gostam. Podemos encontrar “Krachai” em pratos que têm peixe como ingrediente principal como Nam Ya Pla (caril de peixe), Kaeng Som (sopa agri-doce), Phad phed Pla Dook (peixe-gato frito picante) ou pastelinhos de caril verde de peixe.
No entanto, pode também ser usado em pratos sem peixe como a Khaeng Liang (sopa picante) ou Phad Phed (carne ou peixe picante frito).

พริกขี้หนู - Bird's Eye Chili - Piripíri olho de pássaro


พริกขี้หนู

เป็นผลมีขนาดเรียวเล็ก ยาวประมาณ 2-3 ซ.ม. เมื่อดิบผลมีสีเขียวเข้ม เมื่อสุกจะค่อยๆ เปลี่ยนเป็น สีแดง มีรสเผ็ดจัดและมีกลิ่นฉุนเผ็ดร้อน นำมารับประทานได้ทั้งสด แห้ง ดอง เผา และแกง ช่วยชูรสอาหารไทยให้มีรสชาติอร่อยขึ้น ทั้งยำ น้ำพริก หรือผัดเผ็ดต่างๆ พริกมีคุณสมบัติทนความร้อนและความเย็นได้ดี ดังนั้น การต้มหรือการแช่แข็งจะไม่ทำให้พริกเผ็ดน้อยลงหรือมากขึ้นแต่อย่างใด แต่ถ้าต้องการจะแก้รสเผ็ด แนะนำว่าน้ำหรือเบียร์ก็พอช่วยได้ แต่ถ้าจะให้ดีให้กินอาหารที่มีไขมันจะช่วยได้ดีขึ้น หรือตามความเชื่อของไทยก็ให้เคี้ยวข้าวสุก

ในพริกขี้หนูมีวิตามิน C และมี beta carotene (หรือวิตามิน A) ซึ่งช่วยให้สายตาดี พริกขี้หนูช่วยกระตุ้นการทำงานของกระเพาะอาหารทำให้ระบบการย่อยอาหารดีขึ้น ช่วยเจริญอาหาร บำรุงธาตุ ขับเหงื่อ ขับลม ขับเสมหะ แก้อาเจียน แก้หิด กลาก เกลื้อน

มีสำนวนไทยที่ว่า “เล็กพริกขี้หนู” มีความหมายตามพจนานุกรมว่า เล็กแต่เก่งกล้าสามารถมาก, เล็กแต่มีพิษสง ก็เปรียบเสมือนพริกขี้หนู ที่เล็กแต่เผ็ดกว่าพริกเม็ดใหญ่ๆ หลายเท่าที่เดียว


Bird's Eye Chili

Bird's Eye Chili is called “Phrik Khi noo” in Thai. It’s a unique small chili, 2-3 cm in length maximum. When it not ripe, has a dark green color that will change to red when it becomes ripe, like any other chilli. Bird's Eye Chili is very hot and have a good fragrance. Can be eaten fresh, dry, pickled, grilled or even cooked. It gives a fabulous taste to Thai dishes such as spicy salad, chili paste or all any kind of spicy stir fried food. This chili has some special characteristic that make him immune to hot or cold temperatures. That’s why boiling or freezing don’t reduce his spiciness. However, if you want to relieve some spicy taste, drink water or beer. This can help but better is to eat food with fat. Thais believe that chewing cooked white rice can also help.

Bird's Eye Chili has Vitamin C and A that help to protect your eyesight. It also has properties that help stimulating the digestive system to work properly, help the digestion, makes you sweat, reduce gas in the intestines, relief nauseas and itchiness.

Thai people have a proverb about the Bird's Eye Chili. “Lek Phrik Khi noo”, which means, according to the Thai dictionary, “is small but full of abilities or small but full of power”. The reason that Thai people use the Bird's Eye Chili in this proverb it’s because is small but extremely spicy, more spicy than any other kind of bigger chili pepper.


Piripíri olho de pássaro

O piripíri olho de pássaro (tradução literal) chama-se “Phrik Khi noo” em tailandês. É uma malagueta muito pequena, com 2-3 cm de comprimento no máximo. Tem uma cor verde quando ainda não está maduro e muda para vermelho, como qualquer outro piripíri, quando madura. É muito picante e tem um cheiro bastante agradável. Pode ser consumido cru, seco, em pickles, grelhado ou mesmo cozido. Empresta um sabor muito bom a pratos tailandeses como a salada picante, paste de piripíri ou qualquer prato frito. Esta malagueta tem características únicas que a fazem imune a altas ou baixas temperaturas, pelo que nunca perde o seu poder picante, seja cozido ou congelado. Para cortar algum do sabor a picante beba água ou cerveja fresca. Isto ajuda mas o melhor é mesmo cozinhar a comida com alguma gordura, pois a mesma pode ajudar a diminuir o impacto do picante. Os tailandeses acreditam que mastigando arroz cozido pode também ajudar a cortar o picante.


O piripíri olho de pássaro tem Vitamina C e A que contribuem para proteger a visão. Tem também propriedades que ajudam a estimular o sistema digestivo, ajudando-o a funcionar regularmente, provoca transpiração, ajuda a reduzir a flatulência, náuseas e comichão de pele.


Os tailandeses têm um provérbio acerca do piripíri olho de pássaro. “Lek Phrik Khi noo”, que significa, de acordo com o dicionário, “pequeno mas com muitas capacidades ou pequeno mas cheio de força”. Isto porque o piripíri olho de pássaro, apesar de pequenino, é extremamente picante, mais picante do que qualquer outra malagueta maior. Em português poderíamos mesmo dizer que “os piripíris não se medem aos palmos”!

ขิง - Ginger - Gengibre

ส่วนที่ใช้มาทำอาหาร คือ เหง้า ขิงเป็นพืชตระกูลเดียวกันกับข่า ขมิ้น และกระวาน มีรสเผ็ดและมีกลิ่นหอม ใช้แต่งกลิ่นอาหาร เพิ่มรสชาติ และดับกลิ่นคาว ขิงอ่อนมีสีขาวเหลือง ขิงแก่มีรสเผ็ดร้อนและมีเส้นใยมากกว่าขิงอ่อน ขิงสามารถนำมาประกอบอาหารได้หลายรูปแบบทั้งรับประทานสด ดอง อบแห้ง หรือทำเป็นผง อาหารที่เราใช้ขิงเป็นส่วนผสม เช่น แกงมัสมั่น ยำปลาทู ไก่ผัดขิง ข้าวมันไก่ แกงกะหรี่ ปลานึ่ง บัวลอยน้ำขิง น้ำจิ้มต่างๆ คุ้กกี้ขิง ลูกอมขิง

ขิงช่วยแก้แก้ท้องอืด ท้องเฟ้อ คลื่นไส้ แก้ไอ ขับเสมหะ ช่วยบรรเทาอาการหวัด ลดไขมันและโคเลสเตอรอล

เรายังมีสำนวนสุภาสิตไทย ที่เกี่ยวกับขิงด้วย คือ “ขิงก็รา ข่าก็แรง” มีความหมายตามพจนานุกรมไทยว่า ต่างก็จัดจ้านพอๆ กัน, ต่างก็มีอารมณ์ร้อนพอๆ กัน, ต่างไม่ยอมลดละ

ที่คนไทยนำสมุนไพร 2 ชนิดนี้มาเปรียบเทียบกัน เนื่องจาก “ขิง” และ “ข่า” ต่างก็มีรสเผ็ดร้อนพอๆ กัน จึงนำมาเปรียบเทียบ คน 2 คน หรือ คน 2 กลุ่มว่า ต่างมีความร้ายพอๆ กัน หรือ ต่างฝ่ายต่างไม่ยอมกัน


Ginger

The part used for cooking comes from rhizome or root. Ginger is called Khing in Thai and it’s from the same family of galangal, turmeric and cardamom. Ginger has a spicy taste and a pleasant smell. Thai people use Khing or ginger in food for taste and flavor but can also be use to cut the unpleasant smell from meat.
Young ginger it’s white to light yellow in color. Old one it’s hotter in taste and has more fiber. Thai people use to eat ginger as a fresh herb, cooked, pickled, dried or in powder. We can find ginger in dishes like Kaeng-mas-sa-man (Thai muslin curry with beef or chicken), Yum Pla Tu (spicy mackerel salad), Kai Pad Khing (stir fried chicken with ginger), Kao Man Kai (Chicken rice), some curries, steamed fish, desserts, and sauces or even ginger candy.

Ginger has properties that can help decreasing gases in the intestines (flatulence), nauseas, coughing, expectoration, relief the flu symptoms, reducing fat and cholesterol levels.

There’s a Thai proverb about the ginger and galangal. “Khing Kor Ra Kha Kor Reang”, that means, according to the Thai dictionary, that both are bad, both have high temperature and both don’t want to be a looser. The dictionary compares it to the English saying “Six of one and half a dozen of the other” (which means that both have the same value in the end result).
Thais to compare these two because the taste of Khing and Kha (galangal) are both strong in taste and smell.


Gengibre

A parte que se usa para cozinhar é retirada do rizoma ou raiz. O gengibre, chama-se Khing em tailandês, e é da mesma família da galanga, açafrão e cardamomo. O gengibre tem sabor picante e um cheiro agradável. Os tailandeses usam Khing ou gengibre para dar mais sabor ou fragrância à comida, no entanto, pode também ser usado para cortar o cheiro desagradável de algumas carnes.
Gengibre jovem apresenta uma cor entre o branco e o amarelo claro. O gengibre mais velho tem um sabor mais picante e é mais fibroso. Os tailandeses usam-no como vegetal fresco, cozido, em vinagre, seco ou em pó. Podemos encontrar gengibre em pratos como Kaeng-mas-sa-man (um caril islâmico de galinha ou carne de vaca), Yum Pla Tu (salada picante de carapau), Kai Pad Khing (galinha frita com gengibre), Kao Man Kai (arroz de galinha), alguns caris, peixe cozido em vapor, sobremesas, molhos e mesmo caramelos de gengibre.

O gengibre tem propriedades que ajudam a reduzir os gases intestinais (flatulência), náuseas, tosse, expectoraçào, alivia sintomas de gripe, reduz os níveis de gordura e colesterol.

Há um provérbio tailandês acerca do gengibre e da galanga. “Khing Kor Ra Kha Kor Reang”, que significa, de acordo com o dicionário tailandês, que ambos são maus, ambos são quentes (Aqui o termo significa faz o paralelo com as personalidade humanas. Querendo dizer que “fervem em pouca água” e que se irritam facilmente) e que ambos não gostam de perder (ou que preferem ser tratados com iguais). O mesmo dicionário faz o paralelismo com uma expressão tipicamente americana (“Six of one and half a dozen of the other” – traduzido literalmente significa “seis de um e meia dúzia de outro”) que significa que são diferentes mas o resultado é o mesmo.
Os tailandeses comparam-nos porque o sabor e o cheiro do Khing e da Kha (galanga) são ambos fortes.

ตะไคร้ - Lemongrass - Erva-cidreira


ตะไคร้

เป็นสมุนไพรที่มีกลิ่นหอม ใช้ในการแต่งกลิ่นและรสให้อาหารไทยเป็นอาหารที่ขึ้นชื่อสำหรับนานาชาติ ใช้เป็นส่วนประกอบของอาหารไทยหลายชนิด เช่น ต้มยำกุ้ง (สำคัญขาดไม่ได้เลย) ต้มข่าไก่ แกงเผ็ดต่างๆ ยำ ปลานึ่งช่วยดับกลิ่นคาวปลา หรือแม้แต่ปรุงเป็นน้ำตะไคร้ช่วยขับลมได้ดีแถมมีรสชาติดีอีกด้วย

ตะไคร้ ช่วยขับลม แก้ท้องอืด ขับปัสสาวะ ช่วยให้เจริญอาหาร ลดความดันสูง น้ำมันหอมระเหยที่มาจากตระไคร้ใช้ทากันยุงได้ ตะไคร้สดนำมาทุบ คั้นเอาน้ำมาดื่มแก้อาการเมาได้ ถ้าใช้ตระไคร้อ่อนมาปรุงอาหารและหั่นไม่หนามากก็สามารถรับประทานได้เลยโดยที่ไม่ระคายเคืองคอเหมือนรับประทานผักทั่วๆ ไป

ยิ่งไปกว่านั้น ยังมีความเชื่อของคนโบราณที่ว่า หากลูกสาวคนเล็กที่ครองความยังเป็นสาวพรหมจรรย์ นำตะไคร้มาปักคว่ำหัวลงก็ช่วยให้ฝนที่กำลังตั้งเค้ามาไม่ตกได้ อันนี้จริงหรือไม่จริงก็ต้องลองกันดู



Lemongrass

It’s called Ta Krai in Thai. It’s an herb with a good fragrant smell. Thai people use it to give good smell and taste to foods, this fragrance makes Thai food recognized internationally. It’s used to cook Tom Yam Kung Kung (sweet and sour spicy soup with shrimp, this soup can’t be complete without lemongrass), Tom Kha Kai (coconut soup with chicken), many kinds of curry dishes, spicy salads, and steamed fish (in steamed fish will help to cut the fishy smell or sea smell). This herb can be also use to make juice that helps to reduce gas in the intestines.

Lemongrass has properties that can help decreasing gas in the intestines (flatulence), has diuretic properties, and helps to increase appetite and reducing blood pressure. The essential oil from lemongrass can be used to protect from mosquitoes. Can also be used, when pounded fresh and mixed with water, to reduce the effects of alcohol hangover. If you use young lemongrass (very tender) it will be easy to eat like a normal vegetable since it will not irritate the throat.

Thai people believe that if the youngest daughter (has to be virgin and can’t be only child) put lemongrass up side down in the soil, it will help to calm down the storms, making the rain not so hard. I don’t know if it’s true because I’ve never tried it. Who knows!


Erva-cidreira

Chama-se Ta Krai em tailandês. É uma erva com cheiro agradável. Os tailandeses usam-na para dar o bom cheiro e sabor que faz da sua cozinha uma das cozinhas asiáticas mais reconhecidas internacionalmente. É usada na Tom Yum Kung Kung (a sopa tailandesa picante agridoce com camarão, não será a mesma se não usar erva-cidreira), Tom Kha Kai (sopa de galinha com leite de coco), muitos tipos de caris, saladas picantes e peixe cozido em vapor (neste tipo de prato a erva-cidreira ajuda a dissimular o cheiro intenso do peixe). Esta erva pode ainda ser usada para fazer sumo que ajuda a reduzir os gases intestinais.

A erva-cidreira tem propriedade que ajudam a diminuir os gases intestinais (flatulência), propriedades diuréticas, e ajuda a aumentar o apetite e a reduzir a pressão arterial. O óleo que contém pode ser usado como repelente de mosquitos. Pode também ser usado, quando misturado com água, para reduzir os efeitos da ressaca. Se usar ramos tenros de erva-cidreira (mais moles), estes podem facilmente ser ingeridos como qualquer outro vegetal visto que não irritarão a garganta.

Existe uma lenda popular tailandesa em que se acredita que se a filha mais nova (tem que ser virgem e filha única) enterrar um ramo de erva-cidreira com as folhas para baixo, ajudará a acalmar a tempestade, fazendo com que a chuva seja menos intensa.
Não sei se será verdade porque nunca experimentei. Mas, quem sabe!

ข่า - Galangal - Galanga

ส่วนที่ใช้มาทำอาหาร คือ เหง้า มีรสเผ็ดและมีกลิ่นหอม ใช้สำหรับปรุงรสชาติและแต่งกลิ่นในการทำอาหารหลายชนิด ไม่ว่าจะเป็น น้ำพริก แกง ผัดเผ็ด หรือยำ อาหารที่เราใช้ข่าเป็นส่วนผสม เช่น ต้มข่าไก่ ต้มยำกุ้ง แกงเผ็ด แกงกระหรี่ น้ำพริกอ่อง แกงป่า หรือแม้แต่น้ำจิ้ม

ข่าช่วยขับลมในลำไส้ แก้ท้องอืด ท้องเฟ้อได้ ถ้าใช้ข่าอ่อนมาปรุงอาหารก็สามารถรับประทานได้เลยโดยที่ไม่มีรสชาติเผ็ดมากไป



Galangal

Galangal has properties that can help decreasing the gas in the intestines (flatulence). If use young galangal to cook, since it’s very tender and not very spicy, can easily be eaten.


Galanga

A parte que se usa para cozinhar é o rizoma ou raiz Galanga chama-se Kha em tailandês.
Tem um sabor picante e um cheiro agradável. Os tailandeses usam Kha, ou galanga, para dar sabor e aroma a pratos como pasta de piripíri ou Nam Prik, caril picante, frituras picantes, ou saladas picantes.

Podemos encontrar galanga na lista de ingredientes de pratos como: Tom Yam Kung (sopa tailandesa agridoce com camarão), Tom Kha Kai (sopa de coco com galinha), muitos pratos de caril, Nam Prik Ong (carne de porco picada com pasta de piripíri ao estilo nordestino), ou em Kaeng Pa (caril da selva; um caril picante sem leite de coco), e também em muitos molhos.

A galanga tem propriedade medicinais que ajudam a diminuir os gases intestinais (flatulência). Se cozinhar com galanga nova, visto ser tenra e não muito picante, pode facilmente ser consumida na totalidade.
