ซุปคุณแม่ - My mom’s soup (Potato with chicken clear soup) - Sopa da mãe (Sopa de batata e galinha)

ที่เรียกว่าซุปคุณแม่เนี่ยก็เนื่องมาจากสูตรนี้เป็นสูตรของแม่เรา หาซื้อ หาทานที่ไหนไม่ได้แน่ๆ อาจจะมีคล้ายๆ บ้าง แต่ยังไงก็ไม่เหมือนรสมือแม่แน่นอน ทำง่าย ซดน้ำแกงอร่อยคล่องคอ ทานมาตั้งแต่เด็กยันเริ่มแก่ ตอนนี้คิดถึงแม่ คิดถึงอาหารรสมือแม่ ก็เลยลองทำดู ก่อนจะลงมือทำก็โทรไปหาแม่ ถามสูตรเคล็ดลับต่างๆ นานา ถึงแม้ว่าเราจะไปยืนเกาะข้างเตาตั้งแต่ยังเด็กและก็พอจำได้บ้างว่าแม่ใส่เครื่องปรุงอะไร แต่ทำเองครั้งแรกโทรไปถามเผื่อความชัวร์ดีกว่า พอทำเสร็จออกมาก็ไม่ผิดหวัง ถึงแม้ว่าจะไม่เหมือนที่แม่ทำทั้งหมด แต่ก็อร่อยไม่ผิดหวัง และก็ทำให้คุณสามีพุงกางกับแกงจืดได้เหมือนกัน เค้าว่าๆ แกงนี้คล้ายๆ กับซุปสัญชาติโปรตุเกส ก็อาจจะเป็นได้ที่มีส่วนคล้ายกัน ก็พี่ๆ ชาวฝอยทองในอดีตเป็นชาวต่างชาติชนชาติแรกที่เข้ามาในประเทศไทย และในพ.ศ. 2554 ก็จะเป็นปีที่ครบรอบความสัมพันธ์ไทย-โปรตุเกส 500 ปี

เครื่องปรุง (สำหรับ 2 ที่)
- มันฝรั่งปอกเปลือก หั่นสี่เหลี่ยม 2 ลูก
- มะเขือเทศ เลือกที่ออกแข็งหน่อย หั่นสี่เหลี่ยม 2 ลูก
- หอมหัวใหญ่ ซอยหยาบๆ 1 ลูก
- ขิงแก่ ปอกเปลือก หั่นแว่น 1 ท่อน
- ปีกไก่บน (ที่เป็นน่องเล็กๆ) อันนี้คือที่แม่เราใส่ แต่ใครอยากใส่อก น้องหรือสะโพกด้วยก็ได้ตามใจชอบ
- รากผักชี 2 ราก
- พริกไทยป่น 2 ช้อนชา
- ซีอิ็วขาว 3 ช้อนโต๊ะ
- ซอสปรุงรส 3 ช้อนโต๊ะ
- น้ำตาลปลายช้อน (ประมาณครึ่งช้อนชา)
- ใครอยากใส่ผงปรุงรสด้วยก็ได้ แม่เราบอกถ้าอยากใส่ก็ใส่ ไม่อยากก็ไม่ต้องใส่ไม่เป็นไร 1 ช้อนชา


วิธีทำ
1. ตั้งน้ำจนเดือดจัด ใส่รากผักชีและขิง ทิ้งไว้ซัก 2-3 นาที จนเริ่มมีกลิ่นขิง แล้วใส่หอมหัวใหญ่ ถ้าใครจะใส่ผงปรุงรสก็ใส่ตอนนี้เลย
2. เมื่อน้ำยังเดือนพล่านอยู่ให้ใส่ไก่ลงไป จากนั้นตามด้วยมันฝรั่ง
3. พอน้ำเดือดอีกครั้งก็ใส่มะเขือเทศ
4. รอจนเข้ากันก็ปรุงรสด้วย ซีอิ็วขาว ซอสปรุงรสน้ำตาล พริกไทยป่น ชิมจนได้รสที่ต้องการ
5. ปิดฝาเคี่ยวให้น้ำแกงข้นและเข้ากันอีกเล็กน้อย ยกลง พร้อมเสิร์ฟ


My mom’s soup (Potato with chicken clear soup)

I called this soup as “My mom’s soup” because it’s a special recipe from her. For sure you can’t buy or find it in any restaurant. There is some that are similar but none tastes exactly like “My mom’s soup”. It’s a clear soup, easy to cook and easy to slurp. I had been eating this soup since I was very young.
The reason I decided to cook this soup because I miss my mom and I miss her food. Before I started, I called her to ask what the secret was and how to cook it exactly. Even I stayed next to her near the stove when I was a kid and I saw her preparing it countless times, nothing like asking the recipe’s owner.
When I finished cooking it, it was successful! I was not disappointed and my husband was full just with clear soup. Even if I think it’s not really exactly the same taste, at least it can replace it while I can’t eat the original one!
My husband says that “My mom’s soup (Potato with chicken clear soup)” tastes like a chicken and potato light stew made in Central Portugal. I believe it can be possible because the Portuguese were the first Europeans who settled in Thailand. Maybe they bring some recipe that influence Thai people. The same happened with other food and even with Thai desserts. To celebrate this, let me remind you that in 2011 will be 500th anniversary of Thai – Portuguese relationship.

Ingredients
- 2 peeled potatoes, cut in 1x1 inch
- 2 tomatoes, cut in 1x1 inch (choose tomato that is not too ripe)
- 1 onion, slice but not too thin
- 1 hard ginger (peeled and cut in small stalks)
- Chicken mid wing (can be used other parts). My mom used the mid wing part but if you want can put other part.
- 2 coriander roots
- 2 teaspoons of white pepper powder
- 3 tablespoons of light soy sauce
- 3 tablespoons of seasoning sauce
- ½ teaspoon of sugar
- 1 teaspoon of chicken powder (optional)

How too cook
1. Put water to boil in a soup pan until it gets really hot and then place the coriander roots and ginger. Leave it for 2-3 minutes until you can smell the ginger. Then put the onion and If you like add chicken powder
2. Add the chicken while the water is boiling and then the potatoes
3. When the water boils again, add the tomatoes
4. Wait until it boils again and cook. Add light soy sauce, seasoning sauce, sugar and white pepper powder. Taste until you get the taste you want.
5. Put the cover and let the soup boil a little bit more to make it thicker. Ready to eat.


Sopa da mãe (Sopa de batata e galinha)

Chamo-lhe “Sopa da mãe” porque esta receita é especial da minha mãe. Certamente que não será possível encontrá-la num restaurante. Por vezes encontramos algumas que se assemelham mas não são exactamente iguais.
Trata-se de uma sopa leve, fácil de cozinhar e fácil de engolir. Lembro-me de comer esta sopa desde muito pequenina.
Decidi fazê-la porque tinha saudades da minha mãe e da comida dela. Antes de começar telefonei-lhe para perguntar qual o segredo e como a fazer, tal e qual como ela. Mesmo tendo ficado junto do fogão vezes sem conta quando era mais nova, nada melhor do que perguntar à autora.
Quando terminei, tinha conseguido. Não fiquei desapontada e o meu Marido ficou satisfeito só com sopa. Mesmo ainda pensando que não é exactamente igual à da minha mãe, serve para satisfazer a minha saudade até comer a original!
O meu marido diz que a “Sopa da Mãe” é muito semelhante, em sabor, a um guisado de galinha e batatas feito na zona central de Portugal. Eu acredito ser possível visto que os Portugueses foram os primeiros europeus a estabelecer-se na Tailândia. Porventura trouxeram algumas receitas que influenciaram os tailandeses. O mesmo aconteceu com outras comidas e sobremesas.
Para celebrar isto, quero-vos relembrar que em 2011 assinalam-se os 500 anos das relações entre a Tailândia e Portugal.

Ingredientes
- 2 batatas descascadas, cortadas em pedaços de 1x1 polegadas
- 2 tomates, cortados em 1x1 polegadas (escolha tomate que não esteja muito maduro)
- 1 cebola, em rodelas mas não muito finas
- 1 gengibre duro (descascado e cortado em pequenos pauzinhos)
- Partes superiores das coxas de galinha. (pode usar-se qualquer outra parte da galinha). A minha usa as partes superiores das coxas de galinha mas, se preferir, pode usar qualquer outra parte
- 2 raízes de salsa
- 2 colheres de chá de pimento branca em pó
- 3 colheres de sopa de molho de soja light
- 3 colheres de sopa de molho inglês
- ½ colher de chá de açúcar
- 1 colher de chá de caldo de galinha em pó (opcional)

Como preparar

1. Meta a água a ferver numa panela para sopa e, quando estiver bem quente, junte as raízes de salsa e o gengibre. Deixe cozer por 2-3 minutos até que consiga cheirar o gengibre. Junte depois a cebola e o caldo de galinha
2. Adicione a galinha quando a água estiver a ferver, seguida das batatas
3. Quando voltar a ferver, junte o tomate
4. Quando voltar a levantar fervura deixe cozer. Depois junte o molho de soja light, o molho inglês, o açúcar e a pimenta branca em pó. Prove até encontrar o sabor que mais lhe agrade
5. Tape a panela e deixe ferver mais uns minutos para que engrosse. Pronta a servir
